Oh boy am I sorry. It has been an age since I last posted on here. Sorry sorry sorry. Its been a wee bit mental my end. Well a lot mental. I have throughly enjoyed the chaos but it has meant free time seems to have disappeared. That is if you don't count the hours sitting in airports waiting for delayed flights. Yes, technically speaking that free time; I digress. The rushing to and fro has meant my time in the kitchen has been minimal, and so today in a (you guessed it) speedy post I am sharing a very quick salad recipe. Something to make on the run really. It can be customised quite easily, as with all salads, but also makes a lovely side dish at dinner.I am planning a big old photo day tomorrow so I hope to bring you more soon. Sorry. Again.
ORANGE, RADISH AND WATERCRESS SALAD
150g watercress, baby spinach or rocket, its up to you!
2 oranges, peeled and sliced into thin discs
2 white or regular radishes, finely sliced
1 tbsp pistachios, chopped
2 tbsp pumpkin seeds, chopped
3 tbsp olive oil
1 tsp lemon juice
1 tbsp white wine vinegar
1/2 teaspoon fine sea salt
50g feta, crumbled
yellow pansies to garnish
Toss all the ingredients together except the feta and pansies. Allow to sit at room temperature for ten minutes - this will encourage the extra juice from the fruit to mix with the dressing. Plate up and add the cheese and pansies. Season with a little pepper if you would like.
